5 healthy recipes

The fresh natural salad of European cuisine is in no way reminiscent of our native Russian-speaking salads – heavy dishes with meat, potatoes and a high-calorie sauce. We take the best of the Italian menu for the sake of our waistlines!

Caprese with arugula and “Chilejina” mozzarella

The combination of unleavened Ciliegina mozzarella, tomatoes and basil is classic and incredibly tasty, but also satisfying and ideal for dinner. And it really is a salad on a light hand – to make it so easy anyone can handle it!

Cooking time: 25 minutes.

Ingredients:

  • 250 g of chili mozzarella
  • 250g cherry tomatoes
  • 4 sprigs of basil
  • a handful of arugula
  • 5 tbsp. the. extra virgin olive oil

For the pesto:

  • a bunch of basil
  • 1 tbsp. the. Pine nuts
  • 5-6 st. the. extra virgin olive oil
  • 70 g grated Parmesan
  • 1 clove of garlic
  • salt

Preperation:

Combine a bunch of basil, nuts and garlic, 5-6 tablespoons of olive oil in a blender and beat until smooth. Then add the Parmesan and press the button again. If the sauce is too thick, add a little oil. Salt.

Cut the tomatoes into slices with a sharp knife, salt, put in a colander. The “trick” of this method is that in 5-7 minutes excess moisture will come out of the tomatoes and they will become more saturated.

Cut the mozzarella balls in half, mix with the tomatoes. Salt, pepper, add oil. Add the arugula and basil and mix. Serve the salad with the pesto sauce.

Radish, mozzarella and daikon salad

From Italy, we go to Japan. An unusual salad for a special occasion.

Cooking time: 15 minutes

Ingredients:

  • 250g of mozzarella
  • 100 g radish
  • 1 tbsp. the. Sesame seeds
  • 1 tbsp. the. truffle flavored oils
  • 2 tbsp. the. sweet chili sauce
  • 2 tbsp. the. oyster sauce
  • 2 stalks of green onions
  • 150 g daikon (otherwise replace with turnips)

Preperation:

Roughly chop the mozzarella. Combine oyster sauce, chili sauce and butter for the dressing. Add salt and stir.

Cut the green onion into slices and the daikon and radish into slices.

Place the mozzarella and vegetables on a plate. Sprinkle with sesame seeds and add the dressing.

Mozzarella and sorrel salad

A very unusual combination: mozzarella and sorrel, white vinegar and seeds. Light salad – made very quickly and easily!

Cooking time: 20 minutes

Ingredients:

  • 250g of mozzarella
  • a handful of sorrel
  • 4 tbsp. the. Olives
  • 4 tbsp. the. Sun-flower seeds
  • 70 g of sundried tomatoes
  • 3 sweet tomatoes

For the sauce:

  • 6 tbsp. the. olive oil
  • 1 tbsp. the. white wine vinegar
  • 1 tablespoon of sugar

Preperation:

Fry the seeds in a pan until golden brown. Cut the fresh tomatoes into slices, the sundried tomatoes into slices.

Rinse and dry the sorrel. You can leave the mozzarella whole.

For the vinaigrette: mix the vinegar with the sugar until the sugar is completely dissolved. Stir in olive oil.

Mix everything with olives, season with sauce, serve.

Mozzarella salad with beans and sundried tomatoes

A light salad that proves that good nutrition is incredibly tasty and very aesthetic!

Cooking time: 20 minutes

Servings: 4

Ingredients:

  • 250g mozzarella
  • 250 g canned white beans
  • 2-3 bunches of basil
  • 70 g of sundried tomatoes
  • 3 cucumbers
  • 3 stalks of celery

For refueling:

  • 2 tbsp. the. flower honey
  • 4 tbsp. the. olive oil
  • 4 tbsp. the. Dijon’s mustard
  • salt and pepper

Preperation:

Dice the celery, cucumbers, sundried tomatoes. Add the beans, mozzarella, basil, celery.

Combine the dressing ingredients, dress the salad and serve.

And now for dessert: ricotta with berries, honey and nuts

If you are losing weight, that doesn’t mean you have absolutely no sweets! Italians love cheeses and even manage to make wonderful desserts from them.

Cooking time: 10 minutes.

Servings: 4

Ingredients:

  • 250g ricotta
  • 2 tbsp. the. Pine nuts
  • 2 tbsp. the. nuts
  • 4 tbsp. the. Acacia honey
  • 100 g of regular honey
  • 150g strawberries
  • 1 tbsp. the. lemon juice

Preperation:

Preheat the oven to 150 degrees and dry the nuts in it for 5 minutes. Mix ordinary honey and acacia. Wash the strawberries, cut each berry into 2 pieces.

Divide the ricotta into 4 portions with a fork and place them in separate bowls. Place honey, strawberries, nuts nearby. Dessert is ready! To make the dish a little more satisfying, serve the dessert on tortillas or lean tarts.
